Beef with spring onion and ginger

beef spring onion ginger oyster sauce


One of the quintesiantial Chinese stir-fries: The sticky sauce coats the beef perfectly while the egg white gives the beef a smooth texture and prevents it from becoming dry. When at the height of my laziness, I throw in some choy sum so that takes care of the veges, but Hubs frowns upon this practice.


Ingredients for beef with spring onion

Ingredients :


1 egg white; cornflour
2 sprigs Spring onion, cut into 2 inch strips
3 cloves garlic, sliced; 2 inch ginger, sliced
200-300 gms beef, sliced
2 tbsp oyster sauce, mixed with 2 tbsp of water

Steps:

1) Coat sliced beef with egg white and cornflour and leave for 20 mins
2) Heat oil, toss in garlic and ginger, smell that fine aroma, then add in the beef
3) Stir fry quickly till beef browns
4) Add in spring onions
5) Add in oyster sauce mixture and stir fry for another minute till sauce is thick (add a bit more water if necessary). Don't overcook the spring onions.
