Battered potato and sweet potato fries

battered sweet potato fries

We love our french fries. One fine day, I decided to try my hand at making my own at home.

Making homemade french fries crisp on the outside and soft inside, however, had me running to the frozens section again. The process involves soaking, frying, and frying yet again. The first and last time I endeavoured it, there was more grease on me than was left in the pan.

But there's more than one way to fry a french fry. I found this recipe which delivers crispy 'skin' and soft flesh.

Potatoes or Sweet potatoes or both
Garlic herbed salt
Flour (I like a mix of rice flour and plain flour)

1) Cut potatoes into strips
2) Coat lightly with flour and garlic salt
3) Drizzle some water and massage with hands till you get a lumpy, sticky batter
4) Heat oil, make sure oil is hot enough by dropping a drop of batter into oil - it should sizzle
5) Fry till crisp and brown.

It's super crunchy, but unfortunately as with all french fries, doesn't stay that way for long. There's only one cure for that, eat fast!
